Recipe: Fruity 'Purton Mess' (Purton House Organics)

This dessert has it all; it's quick, healthy and tastes fantastic. It couldn't be simpler to whip up this perfect summer pud!

This is Purton House Organics' delicious take on the classic perennial dessert favourite 'Eton Mess'. Made with fresh fruit and locally-sourced meringues and cream to give it that Purton House Organics twist. The use of gooseberries and blackcurrants adds a unique and zingy twist!

Serves 4

Ingredients:

2 handfuls blackcurrants
2 handfuls gooseberries
2 peaches
2 bananas
250ml double/whipping cream
4 small meringues

Method:

1. Wash the fruit and pick off any stems from the berries.
2. Peel the peaches and bananas, and cut into chunks; then mix with the berries.
3. Whip the cream well until stiff.
4. Place a spoonful of fruit into a small bowl or glass, then add a dollop of cream on top of each.
5. Crumble the broken meringues on top, them add the rest of the fruit, and the rest of the cream, and top with any leftover meringue crumbs.
6. Chill all the bowls for at least 15 minutes: then enjoy!
