Chiseldon House Recipe of the Month: May 2017

Paul Suter, Head Chef at Chiseldon House Hotel's AA Rosette restaurant, shares with us his favourite recipe for this month for you to try out at home... or just book a table and let him cook for you!

My recipe this month just had to be the delicious Wild Garlic Soup that I have recently created utilising the fantastic crop discovered in our gardens here at the house, you may have seen the photo’s that Sue, our General Manager posted on our Facebook Page?!
 
Such a simple recipe with minimal ingredients but so very tasty (well that’s what our customers have been telling us!)
 
Ingredients:
  • 1 Onion – finely chopped
  • 2 Sticks of Celery – finely chopped
  • 3 Peeled White Potatoes – finely chopped
  • 2 Kilos of freshly picked and washed Wild Garlic Leaves
  • A Little Butter
  • A Little Oil (I used Rapeseed Oil, however Vegetable Oil works equally as well)
  • Salt & Pepper to season
Method:
 

1) Sweat the onion and celery in a little oil and butter until almost transparent

2) Add potatoes, cover with water and bring to the boil

3) When the potatoes are soft, add the Wild Garlic Leaves and cook for 3-4 minutes

4) Season with Salt & Pepper to taste

5) Once cooked, blend well, pass through a strainer for a finer soup

6) Enjoy with fresh crusty bread
